Akayu Ramen is a local specialty from the former town of Akayu in Nanyo City, Yamagata Prefecture. While many ramen dishes in Yamagata are known for their soy sauce-based broths, Akayu Ramen has a distinctive style featuring a miso-based soup topped with a mound of spicy miso.

The spicy miso is placed in the center of the bowl rather than being mixed into the soup from the beginning. Diners can gradually dissolve it into the broth as they eat, allowing the flavor and level of spiciness to change little by little. Ryushanghai and Its Famous Akayu Karami Miso Ramen

Akayu is also known as a “town of ramen”, and one of its best-known ramen shops is Ryushanghai Akayu Main Shop. Founded in 1958, this long-established restaurant attracts ramen lovers from throughout Japan who come to taste its signature Akayu Karami Miso Ramen.

The dish combines a rich miso broth with spicy miso made using chili peppers associated with the Akayu area, along with thick, flat, curly noodles. The substantial noodles hold plenty of the flavorful broth, while gradually mixing in the spicy miso adds new layers of heat and aroma.

Thick, Flat, Handmade Noodles

Ryushanghai places particular emphasis on making its own noodles. The noodles are made with high-quality wheat and a high-hydration dough. Each portion is kneaded by hand to create its characteristic curls.

The thick, flat noodles have a pleasantly chewy texture and firm bite. Their shape allows them to hold the rich miso broth well. At approximately 180 grams per serving, they also make for a satisfying and filling bowl of ramen.

A Rich Broth Made with Many Ingredients

How Spicy Miso Ramen Was Born

Ryushanghai was founded in 1958. In its early days, the restaurant struggled to attract enough customers. According to the story passed down by the restaurant, the first owner sometimes took leftover soup home, added miso, and turned it into miso soup for his family.

One day, his son added noodles to the miso soup and enjoyed the combination. He encouraged his father to try developing it as a ramen dish, which became the starting point for the creation of a new style of ramen.

The Creation of the “Karami Miso” Style

After repeated experimentation, the restaurant developed a distinctive style in 1960. Spicy miso made with local chili peppers from Akayu and Yamagata red miso was placed directly on top of the ramen rather than being mixed throughout the soup in advance.

This approach allows each diner to control the amount of spicy miso they mix into the broth. The ability to adjust the heat while gradually changing the flavor has become one of the defining characteristics of Akayu Karami Miso Ramen.

Born Around the Same Era as Sapporo-Style Miso Ramen

Miso ramen is often associated with Sapporo, where the restaurant Ajino Sanpei is widely credited with introducing its own miso ramen in 1961. Ryushanghai began serving its miso ramen around the same period.

At the time, information did not circulate as widely as it does today. Ramen critic Hiroshi Osaki has suggested that the development of miso ramen in the two regions may have occurred independently rather than one being directly modeled on the other.

From a Local Specialty to a Ramen Known Across Japan

Ryushanghai continued to build a loyal following in Akayu over the decades. In 2005, the restaurant opened a branch at the Shin-Yokohama Ramen Museum, introducing its ramen to an even wider audience.

In 2008, a cup noodle version called “Ryushanghai Yamagata Akayu Karami Miso Ramen”, produced by Myojo Foods, was sold at 7-Eleven stores. These developments helped introduce Akayu Karami Miso Ramen to ramen fans throughout Japan.

Representing Nanyo’s Ramen Culture

Akayu Ramen has become more than the specialty of a single restaurant. It is now an important part of the food culture of Nanyo City and is used to promote the area’s culinary identity.

In 2017, the booklet Nanyo-shi no Ramen (“Ramen of Nanyo City”), produced through Nanyo City’s “Ramen Section R&R Project,” introduced Akayu Ramen and Ryushanghai as part of the city’s local ramen culture.
