Hakkoda Beef is a rare type of Japanese Shorthorn beef raised on farms at the foot of the Hakkoda Mountains in Aomori Prefecture. At an elevation of approximately 500 meters, the surrounding landscape is covered with natural forests of beech and oak, providing a cool and clean environment for raising cattle.

Unlike highly marbled beef that is valued primarily for its abundant fat, Hakkoda Beef is characterized by its lean, finely flavored meat with relatively little marbling. It has a supple yet pleasantly firm texture, a mild flavor, and a clean finish, allowing diners to appreciate the deep, concentrated umami of the beef itself.

Raised in the Natural Environment of the Hakkoda Mountains

Hakkoda cattle spend the summer grazing freely across the expansive foothills of the Hakkoda Mountains. During the winter, they are brought back to the village and raised in barns.

While in the barns, the cattle are primarily fed hay produced on the farms and rice straw from the local area. This natural feeding system is part of the traditional approach to raising Hakkoda Beef.

The fat of Hakkoda Beef has a distinctive creamy color, which reflects the cattle’s diet rich in pasture and grass-based feed. This is quite different from the appearance of heavily marbled Wagyu, where abundant white fat is a defining feature.

A Rare Breed Making a Comeback

Hakkoda Beef became increasingly rare as Japan’s standardized beef grading and market system placed considerable value on the amount of marbling. As a result, many farmers shifted toward Japanese Black cattle, which tend to develop more marbling and can command higher prices.

This change caused the number of Japanese Shorthorn cattle raised in the region to decline dramatically. In recent years, however, efforts have been made to revive Hakkoda Beef, and the number of cattle is gradually beginning to increase again.

The Flavor of Beef, Not Just the Fat

The greatest appeal of Hakkoda Beef is its emphasis on the natural flavor and umami of the meat itself rather than the richness of fat. Its lean meat has a satisfying bite and a deep flavor that remains pleasantly on the palate.

This makes it an excellent choice for a wide variety of dishes. Hakkoda Beef can be enjoyed as steak, grilled beef, or shabu-shabu, a Japanese hot pot dish in which thin slices of meat are briefly cooked in hot broth.

It is also well suited to hamburgers and stews. Slow-cooked dishes such as beef stew and pot-au-feu allow the meat’s rich flavor to gradually blend into the broth.
