Hida shinazuke is a traditional assortment of salt-pickled vegetables from the Hida region of Gifu Prefecture. Ingredients typically include locally grown red turnips, cucumbers, daikon radishes, and mushrooms. The name “shinazuke” refers to the variety of different ingredients used to make these pickles.
In the past, heavy snowfall often cut off transportation routes throughout Hida, making it difficult for residents to obtain fresh vegetables during winter. Shinazuke therefore played an important role as a preserved food, helping households maintain a supply of vegetables through the cold months.
The preparation begins in summer, when vegetables are harvested and gradually preserved in salt. In autumn, additional ingredients such as mushrooms, Japanese ginger (myoga), and plum vinegar are added to create a more complex flavor.
As the weather turns colder, red turnips with their leaves removed are added to the mixture. Their natural pigments give the finished pickles a beautiful pale pink color, making them as visually appealing as they are delicious.
Because shinazuke combines several kinds of vegetables and seasonal ingredients, each component contributes its own distinctive flavor and texture. This colorful regional specialty reflects the resourcefulness of Hida’s traditional food culture and the importance of preserving the harvest for the long winter.
