Sendai Aoba Gyoza

Sendai’s New Local Specialty

Sendai Aoba Gyoza is a distinctive local version of Japanese gyoza dumplings made with Sendai Yukina, a traditional leafy vegetable from Sendai. The dumplings are characterized by their vivid green color, inspired by the fresh green leaves associated with Sendai’s nickname, the “City of Trees.”

Sendai Yukina is blended generously into the gyoza wrappers, accounting for more than 40% of the wrapper ingredients. The filling also contains Sendai-grown vegetables, giving the entire dumpling its striking green appearance. With a gentle flavor that highlights the natural taste of vegetables, Sendai Aoba Gyoza can be enjoyed by people of all ages.

Bright Green Wrappers Made with Sendai Yukina

The most immediately recognizable feature of Sendai Aoba Gyoza is its green wrapper made with Sendai Yukina. This traditional vegetable has been cultivated around Sendai for generations and looks similar to komatsuna, or Japanese mustard spinach. It has a mildly bitter taste balanced by a subtle sweetness and a distinctive vegetable aroma.

The wrappers are relatively thick, giving the dumplings a pleasantly chewy texture when pan-fried. They are also said to remain relatively soft even after cooling, making them suitable not only as part of a regular meal but also for enjoying in a variety of settings.

Sendai Yukina and Local Vegetables in the Filling

Sendai Aoba Gyoza uses local vegetables not only in the wrapper but also in the filling. Sendai Yukina and other vegetables grown in the Sendai area are generously incorporated into the filling, creating a lighter and more delicate flavor than that of conventional meat-focused gyoza.

The combination of a vegetable-rich filling and the chewy wrapper made with Sendai Yukina provides a satisfying bite while allowing the natural flavor of the vegetables to stand out. Together with its vivid green appearance, this makes the dish a distinctive way to experience the character of Sendai.

Different Ideas at Each Restaurant

Restaurants serving Sendai Aoba Gyoza in Sendai have developed their own approaches to ingredients and preparation. Some restaurants cut the Sendai Yukina into relatively large pieces and mix them into the filling, creating a pleasant crisp texture that highlights the vegetable.

Some restaurants also serve a special dipping sauce made with Sendai miso, adding another distinctly local flavor. Because the taste and texture can vary from one restaurant to another, trying different versions can be an enjoyable part of exploring Sendai’s local food culture.

How Sendai Aoba Gyoza Was Created

Sendai Aoba Gyoza was developed as part of an effort to create new local dishes using agricultural products grown in Sendai. During fiscal 2009, projects were undertaken to develop new food products using locally produced agricultural ingredients, with the goals of supporting agriculture and stimulating the local economy. Sendai Aoba Gyoza was one of the products created through this initiative.

The dumplings made their public debut at the Sendai Aoba Festival in May 2010. By incorporating a traditional Sendai vegetable and giving the dumplings a green color reminiscent of the city’s abundant greenery, the dish gradually became known as a new local specialty.

A Local Dish Inspired by the “City of Trees”

The green color of Sendai Aoba Gyoza reflects Sendai’s lush natural environment and its long-standing image as the “City of Trees.” Using locally grown Sendai Yukina in both the wrapper and filling makes the dish an accessible way for visitors to experience the agricultural products of the region.

Although it is a relatively new Sendai specialty, its use of a traditional local vegetable gives it a connection to the area’s food culture. When sightseeing in Sendai, consider looking beyond famous dishes such as beef tongue and trying Sendai Aoba Gyoza as well.

A Perfect Match for Beer

With the savory flavor of vegetables, the distinctive taste of Sendai Yukina, and the chewy texture of its wrapper, Sendai Aoba Gyoza makes a satisfying meal and also pairs well with beer and other alcoholic drinks. Freshly pan-fried dumplings offer a particularly enjoyable combination of fragrant, lightly crisped wrappers and juicy filling.

Several restaurants in Sendai serve their own versions, allowing visitors to experience different interpretations of this local specialty. Be sure to appreciate not only the flavor but also the bright green appearance of the dumplings as you discover the distinctive taste of Sendai Yukina.
