Genkidama Garlic is a locally produced specialty of Yamagata City in Gifu Prefecture. It is sold in several forms, including fresh garlic, fermented black garlic, and processed products such as noodles infused with black garlic. The ingredient has also inspired a variety of original dishes, including the popular Genkidama Burger.
Garlic cultivation began in Yamagata City in 2008 as an agricultural initiative focused on growing crops that could withstand damage caused by wild animals and be turned into higher-value processed products. In 2012, the name “Genkidama” was registered as a trademark.
Black garlic has a naturally fruity flavor and can be enjoyed on its own. For a simple serving idea, try pairing it with plain yogurt.
Another delicious option is a cream cheese dip made with black garlic. This recipe was developed by Gifu Cooking College and combines the distinctive sweetness of black garlic with the rich, creamy texture of cheese.
Ingredients and preparation:
1. Grate one clove of black garlic and cut two additional cloves into small cubes. Finely chop the parsley.
2. Place the prepared black garlic in a bowl and add lemon juice, cream cheese, tuna, mayonnaise, and parsley.
3. Season with salt and pepper to taste, mix well, and serve.
