Ginhikari is a premium rainbow trout developed and raised in Gunma Prefecture. This rare branded fish is cultivated using the exceptionally clear spring water that flows from Katsubosawa at the foot of Mount Akagi, and very little of it is distributed outside Gunma.
The name “Ginhikari” literally suggests “silver shine.” It comes from the beautiful silvery sheen of the fish’s skin, which gleams strikingly when the trout is lifted from the water.
One of Ginhikari’s most notable characteristics is its fine-grained, smooth flesh. The meat is firm and well-textured while displaying an attractive color reminiscent of salmon.
