Kameyama Miso-Yaki Udon is a regional noodle dish developed as part of a local revitalization initiative in Kameyama, Mie Prefecture. Thick udon noodles are stir-fried with meat and vegetables on a hot griddle, then seasoned with a distinctive sauce based on red miso. Its savory flavor and gentle spiciness make it a hearty and satisfying dish.
Kameyama has long been an important transportation hub, and its restaurants have traditionally served many truck drivers passing through the city. The dish is believed to have originated in local yakiniku restaurants, where diners added udon noodles to grilled meat and vegetables cooked with the restaurants’ special miso sauce on an iron griddle.
This style of cooking had been served for more than 40 years before it gained recognition as a local specialty. Its bold, slightly spicy flavor became popular not only in restaurants but also in local homes.
The dish has become a symbol of Kameyama’s food culture, supported by a local revitalization group called Kameyama Miso-Yaki Udon Honpo. The initiative has also introduced a mascot character and a theme song created by a local singer-songwriter to promote the specialty.
In April 2010, Kameyama Miso-Yaki Udon won second place at Mie Prefecture’s second local gourmet food competition. Today, visitors can enjoy this distinctive dish at approximately 25 restaurants across the city.
