Nishigai is a small sea snail that has traditionally been enjoyed in the Shonai region of Yamagata Prefecture. It is generally known in Japanese as Reishi-gai, while it is also affectionately called “Nishige” in the Shonai area.
Measuring only about 3 cm in length, this small spiral-shaped shellfish can be found across a wide area of the Japanese coastline, from Hokkaido to the Chugoku region. It often inhabits rocky areas along the shore, so visitors may encounter it while exploring tide pools or rocky beaches.
Although Nishigai is not widely distributed throughout Japan, it has long been enjoyed as a familiar ingredient in the coastal communities where it is found. In the Shonai region, it was traditionally eaten locally and was not commonly seen in markets outside the area.
In recent years, Nishigai has become easier to find at supermarkets and fish shops in the Shonai region, where it is appreciated as a distinctive local seafood ingredient.
One of the most traditional ways to enjoy Nishigai in Shonai is in miso soup. Despite its small size, the shellfish is rich in natural umami. When simmered, it releases its savory flavors into the broth, giving the miso soup a deeper and more complex taste.
Nishigai can have a subtle bitterness, balanced by the shellfish’s natural sweetness and umami. These flavors pair particularly well with miso, and eating the small snails one by one from the richly seasoned broth is part of the enjoyment.
The best season for Nishigai is generally from June through August. It is one of the local seafood delicacies that can be enjoyed along the Shonai coast during the summer months.
