Kaki Monaka is a traditional Japanese sweet made with the rich flavor of persimmons grown in Yoshino, Nara Prefecture. The Nishiyoshino area of Gojo City is one of Japan’s leading persimmon-producing regions, and the local fruit is the star ingredient in this distinctive confection from Nara Yoshino Ishii, a specialty shop devoted to persimmons.
The shop’s persimmon filling is slowly cooked by hand by skilled artisans, developing a deep, rich sweetness. Fresh yuzu citrus from Nishiyoshino is added to give the filling a refreshing fragrance and a delicate tang that balances the fruit’s natural sweetness.
Unlike many traditional Japanese sweets, Kaki Monaka contains no white bean paste. Instead, the filling is made from persimmons themselves, with small cubes of fresh persimmon mixed in for extra flavor and texture. The filling is sandwiched between crisp monaka wafers shaped like little persimmons, making the sweets as attractive as they are delicious.
Each piece contains persimmon filling made with approximately half a persimmon, giving it a wonderfully concentrated fruit flavor. The contrast between the crisp wafer and the soft filling, along with the little pieces of fruit, makes every bite enjoyable. The hint of yuzu adds a pleasant citrus note, leaving a clean, refreshing finish.
The sweets are made without preservatives, artificial coloring, or artificial flavorings, allowing the natural character of the ingredients to shine through.
Another specialty is Kaki Manju, a sweet bun filled with the same flavorful persimmon paste and wrapped in a light, crisp pastry with a Western-style texture. Shaped to resemble a persimmon and topped with a real persimmon calyx, each bun has a charmingly lifelike appearance that is sure to bring a smile. It is a delightful way to enjoy the distinctive sweetness of Nara’s famous fruit.
