Wakakusa nabe is a distinctive hot pot dish created by Edosan, a traditional Japanese inn and restaurant located within Nara Park. The establishment opened in 1907 as a Japanese restaurant and has long been associated with Nara’s culinary and cultural heritage. The dish was named by the celebrated Japanese novelist Naoya Shiga, who drew inspiration from the lush green slopes of Mount Wakakusa.
The hot pot is famous for its striking presentation. A generous mound of spinach forms the base, while more than 20 ingredients—including seafood such as spiny lobster and sea bream, assorted vegetables, and yuba (tofu skin)—are arranged in a towering, mountain-like shape.
The ingredients are cooked in a specially made earthenware pot over charcoal. The broth is a light, delicate stock based on bonito flakes and kombu kelp. As the ingredients simmer, their natural flavors gradually mingle with the broth, creating a deep and satisfying taste without an overpowering seasoning.
The abundant spinach at the center of the dish evokes the fresh green grass covering Mount Wakakusa, a well-known landmark in Nara. This visual resemblance inspired the name “Wakakusa nabe,” linking the dish to the landscape of the ancient capital.
More than an elaborate meal, the hot pot reflects the Japanese appreciation of seasonal ingredients, careful presentation, and the pleasure of sharing a beautifully prepared dish.
Wakakusa nabe is served exclusively at Edosan, whose traditional Japanese-style rooms offer an atmosphere reminiscent of a tea house. The dish is generally available from October through March, attracting food enthusiasts from across Japan during the colder months.
Guests can enjoy the meal without staying overnight at the inn. Dining in the atmospheric setting, surrounded by the history of Nara Park, offers a memorable opportunity to experience a celebrated local specialty that has been enjoyed by writers and other prominent figures since the Meiji era (1868–1912).
For travelers seeking a distinctive Japanese hot pot and a traditional dining experience, Wakakusa nabe combines seasonal flavors, elegant presentation, and the cultural charm of historic Nara.
