Discover the Distinctive Food Culture of the Indigenous Ainu People of Hokkaido

Ainu cuisine reflects the unique food culture developed by the Ainu people, the Indigenous people of Hokkaido and surrounding northern regions. Closely connected with the natural environment, traditional Ainu cooking made use of a wide variety of fish, game, wild plants, berries, and other foods available in the forests, rivers, lakes, and seas.

A Cuisine Shaped by the Rich Nature of the North

Salmon and herring were important ingredients, along with wild plants and mushrooms such as fuki butterbur and maitake mushrooms. Traditional cuisine also incorporated a diverse range of game and seafood, including deer, raccoon dogs, foxes, Steller sea lions, and sharks.

Wild plants were particularly important in the Ainu diet. Kitopiro, the Ainu name for gyōja-ninniku or Siberian onion, was widely used, while the fruit of sarunashi, a wild kiwi-like fruit, was another food gathered from nature. These ingredients demonstrate how closely traditional Ainu food culture was connected with the seasons and the surrounding landscape.

Traditional Ainu Dishes

Today, visitors can experience traditional Ainu dishes in places where Ainu culture continues to be passed down. One such place is Akan Kotan on the shores of Lake Akan, where a variety of traditional foods can be enjoyed.

A representative meal is the Yukku Set, which brings together several distinctive Ainu dishes. It includes Maam, rice cooked with kitopiro and wild mountain vegetables; Yukku Ohau, a nourishing soup made with venison; and Mefun, a traditional salted preparation made from salmon’s kidney.

Food Culture Rooted in Nature and Tradition

Ainu cuisine is more than a collection of traditional recipes. It represents a way of living closely connected with the natural environment of northern Japan. Fish from rivers and seas, game from forests, and edible plants gathered according to the season were all incorporated into meals.

For travelers, tasting Ainu cuisine offers an opportunity to encounter an important part of Hokkaido’s cultural heritage through food. In the Akan Kotan area, traditional dishes provide a direct and memorable way to appreciate the distinctive ingredients and culinary traditions of the Ainu people.
