Yamato Meat Chicken

Premium Japanese Free-Range Chicken with Rich Flavor and Firm Texture

Yamato Meat Chicken is a premium local chicken breed raised in Nara Prefecture. It is known for its reddish meat, moderate fat content, and firm, satisfying texture. The meat has a natural sweetness and deep, savory flavor that highlights the distinctive taste of chicken itself.

Versatile and flavorful, Yamato Meat Chicken can be enjoyed in many Japanese dishes, including chicken tataki, salt-grilled chicken, hot pots, shabu-shabu, sukiyaki, and yakitori. Its different cuts are also suitable for a wide range of Japanese, Western, and Chinese recipes, with the meat, internal organs, and bones all used in cooking.

Reviving the Traditional Flavor of Yamato Kashiwa

Before World War II, Nara was known for raising a traditional chicken called Yamato Kashiwa. Its excellent meat quality earned a strong reputation throughout the Kyoto–Osaka–Kobe region. Alongside Aichi and Tokushima prefectures, Nara was regarded as one of Japan’s three major poultry-producing areas.

After the war, however, government controls on feed distribution caused production to decline sharply. From the 1960s onward, inexpensive broiler chickens, which could be raised quickly in large quantities, became widespread. Yamato Kashiwa required more time and labor to raise, and the traditional breed gradually disappeared.

As interest grew in restoring the familiar flavor of Yamato Kashiwa, breeders worked through repeated trials to recreate its distinctive qualities. Their efforts resulted in Yamato Meat Chicken, a locally developed crossbreed produced by combining three breeds: Large Shamo, Nagoya, and New Hampshire.

The chicken entered full-scale commercial distribution in 1982 (Showa 57) and has since become one of Nara Prefecture’s representative specialty products.

Carefully Raised for 120–140 Days

One of the key differences between Yamato Meat Chicken and ordinary broiler chickens is the time and care devoted to raising them. While standard broilers are generally shipped after around 60 days, Yamato Meat Chicken is raised in open-floor housing rather than confined cages and takes approximately 120–140 days to reach market size.

This extended rearing period helps develop its characteristic firm texture and deep flavor. For travelers exploring Nara’s regional cuisine, Yamato Meat Chicken offers a chance to experience a local specialty rooted in the effort to preserve the taste of traditional Japanese poultry.

How to Enjoy Yamato Meat Chicken

For a simple introduction to its natural flavor, try it grilled with salt or served as yakitori. It is also well suited to hot pots and sukiyaki, where the meat’s savory taste enriches the broth. In dishes such as shabu-shabu, thin slices can be briefly cooked in hot stock to appreciate their texture and flavor.

From the meat itself to the bones used to prepare stock, Yamato Meat Chicken lends itself to a variety of cooking styles. Look for it on menus featuring Nara’s local specialties to discover a distinctive taste of the prefecture’s food culture.
