Hibayaki: Charcoal-Grilled Seafood

A Traditional Ise-Shima Specialty Featuring Fresh Seafood Grilled Over Charcoal

The Origins of Hibayaki

Hibayaki is a traditional seafood dish from the Shima region of Mie Prefecture. The name comes from hiba, a hearth-like place where female divers known as ama would gather to warm themselves. At these fires, freshly caught seafood, including spiny lobster, was grilled over charcoal and enjoyed straight from the sea.

Because the seafood was traditionally grilled while still alive, the dish has also sometimes been called zankoku-yaki, meaning “cruel grilling.” However, its defining appeal lies in the freshness of the ingredients and the opportunity to experience the natural flavors of seafood cooked simply over an open fire.

Enjoy the Natural Flavors of the Sea

Ise-Shima has a long tradition of ama diving and coastal fishing, and Hibayaki reflects the region’s close relationship with the ocean. Rather than relying on elaborate seasonings, this cooking style allows the seafood’s own flavor and sweetness to take center stage. Spiny lobster and other freshly caught seafood are especially prized for their rich taste and satisfying texture.

A Regional Delicacy Loved Beyond Mie

Once closely associated with the daily lives of local fishing communities, Hibayaki has become a celebrated regional specialty. Today, seafood lovers travel from across Japan, including the Kansai, Tokai, and Kanto regions, to enjoy this distinctive Ise-Shima dining experience.

For visitors exploring Ise and Shima, Hibayaki offers more than a seafood meal. It is a chance to experience a traditional cooking style rooted in the lives of the region’s coastal communities and to savor the exceptional freshness of Mie Prefecture’s marine bounty.
