Ise Udon

Extra-thick, soft and chewy noodles served simply with a rich, slightly sweet sauce

A Beloved Noodle Dish from Ise

Ise Udon is a regional specialty from Ise in Mie Prefecture, known for its exceptionally thick, soft noodles and distinctive savory-sweet sauce. The noodles are boiled for an extended period until they become tender and chewy, then coated in a rich sauce made with tamari soy sauce and dashi broth, often prepared with ingredients such as bonito flakes and dried sardines.

Unlike many Japanese noodle dishes, Ise Udon is traditionally served with very few toppings, usually just chopped green onions. This simple presentation allows the flavor of the sauce and the unique texture of the noodles to take center stage.

A Tradition Rooted in Ise’s Food Culture

The origins of Ise Udon are believed to date back to before the Edo period (1603–1868), when farmers in the Ise area ate noodles flavored with tamari, a type of soy sauce traditionally made as a by-product of miso production. Adding dashi broth is thought to have made the dish easier and more enjoyable to eat.

Over time, shops began serving udon to pilgrims visiting Ise Jingu, helping the dish become established as a local specialty. Today, Ise Udon remains a familiar everyday meal in local households as well as a favorite among visitors exploring the region.

Enjoy the Comforting Simplicity

With its unusually soft noodles, deep umami flavor, and gently sweet sauce, Ise Udon offers a different experience from the firmer noodles and lighter broths found elsewhere in Japan. Its uncomplicated preparation reflects the long-standing food traditions of Ise, making it a must-try dish for anyone interested in regional Japanese cuisine.
