Beni Ebi is a type of sweet shrimp caught along the Shonai Coast of Yamagata Prefecture. The Shonai Coast is known as one of Japan’s important shrimp-producing areas. At Nezugaseki Port in Tsuruoka City, freshly caught shrimp are packed into boxes while still aboard the fishing boats, helping preserve their freshness until they are brought ashore.
One of the most distinctive characteristics of Beni Ebi is its bright red color. Shrimp that grow in colder waters tend to develop a particularly vivid red coloration.
The beautiful red appearance is said to resemble the look of a woman wearing red lipstick, which is thought to be the inspiration behind the name “Beni Ebi,” meaning “crimson shrimp.”
Beni Ebi has a smooth, slightly sticky texture and a rich natural sweetness. To fully appreciate the flavor of the fresh shrimp, eating it as sashimi is highly recommended.
