Yamagata Abalone

A Treasured Seafood of the Shonai Coast, Available Both Wild-Caught and Farm-Raised

Abalone from Yamagata Prefecture is one of the prized seafood specialties of the Shonai Coast, which stretches along the Sea of Japan. In Shonai, visitors can enjoy both wild-caught abalone harvested using traditional fishing methods and farm-raised abalone cultivated in the area’s favorable marine environment.

Raised in the rich waters of the Sea of Japan, abalone is prized for its firm, pleasantly chewy texture and concentrated umami flavor. It is a seasonal delicacy that is well worth seeking out when exploring the seafood cuisine of the Shonai region.

“Hitokuchi Awabi”: Small Farm-Raised Abalone from Shonai

The Shonai Coast has conditions well suited to abalone farming, including relatively calm waters, low water temperatures, and clean, high-quality seawater. Abalone farming began in the area in 1987.

Farm-raised abalone has since become a popular local seafood product. Among these, abalone harvested at approximately 6.5 cm in size is known as “Hitokuchi Awabi,” meaning “one-bite abalone.” Its compact size makes it easy to enjoy while still offering the characteristic texture and umami of abalone, making it a small but luxurious local delicacy.

An Easy-to-Enjoy Size

The appeal of Hitokuchi Awabi lies in its convenient size. Although small enough to enjoy easily, it still delivers the distinctive firmness and rich flavor associated with abalone. It is a seafood specialty made possible by the combination of Shonai’s favorable marine environment and local aquaculture expertise.

Wild Abalone Harvested Using Traditional Fishing Methods

Wild abalone is also harvested along the Shonai Coast. Local fishermen continue to use a traditional method in which they lean over the side of a boat and look down toward the seabed through a viewing device called a “hakomegane” to locate abalone near the surface.

Because the abalone must be carefully spotted and harvested individually from the seabed, the work requires considerable experience and skill. Fishermen use long poles measuring around four meters to reach the abalone below, creating a striking example of traditional fishing expertise passed down through generations.

Rich Umami Shaped by Shonai’s Abundant Waters

The rich waters flowing from the surrounding mountains play an important role in supporting the marine environment of the Shonai Coast. Clear water flowing from areas around the Dewa Sanzan mountains carries various natural minerals and nutrients toward the sea, helping create favorable conditions for marine life.

Abalone raised in these waters is prized for its concentrated umami and firm, satisfying texture. One of the pleasures of Shonai’s seafood culture is the opportunity to experience the different qualities of both wild-caught and farm-raised abalone.
