A Key Ingredient in Chiba’s Famous Namero

Flying fish are a distinctive local fish found in the waters around Minamiboso, southern Chiba. As their name suggests, they are known for leaping energetically above the surface of the sea.

Flying fish migrate through the coastal waters of Minamiboso and are often caught during nighttime fishing for horse mackerel and mackerel. Attracted by the lights of fishing boats, they approach the surface, where fishermen catch them using drift nets positioned just below the water’s surface.

Light and Refreshing Flavor

Because flying fish are highly active swimmers, their flesh contains relatively little fat. This gives them a light, clean, and refreshing flavor that is well suited to a variety of Japanese preparations.

Flying fish can also be used to make sanga-yaki, another traditional coastal dish closely associated with Chiba’s fishing culture. These preparations highlight the natural flavor of the fish while showcasing the simple, flavorful cooking traditions of the Boso Peninsula.
