Otaru Nigiri Sushi – Fresh Seafood from Hokkaido’s Historic Port Town

Fresh Seafood Served as Nigiri Sushi in the Port Town of Otaru

Otaru Nigiri Sushi is one of the culinary specialties of Otaru, a historic port town in Hokkaido known throughout Japan as a “town of sushi.” With a large natural harbor facing Ishikari Bay, Otaru has long benefited from an abundant supply of fresh seafood.

The quality and freshness of Otaru’s seafood attracted sushi chefs from across Japan. During the Meiji and Taisho periods, young chefs who had trained in different parts of the country came to Otaru and opened their own sushi restaurants. This growing concentration of skilled chefs helped establish Otaru’s reputation as one of Hokkaido’s leading sushi destinations.

Otaru’s Famous Sushi Street

Today, sushi restaurants can be found throughout Otaru. One particularly well-known area is Sushiya-dori, or “Sushi Restaurant Street,” located southwest of Otaru Station on the way toward the famous Otaru Canal. Nearly 20 sushi restaurants line this street, making it an excellent place to experience the city’s distinctive sushi culture.

Otaru’s appeal lies not only in the quality of its seafood but also in the skills of its chefs. Sushi artisans who came from different parts of Japan have competed and refined their techniques over generations, creating a local sushi culture that combines excellent ingredients with carefully developed craftsmanship.

Sea Urchin – One of Otaru’s Signature Sushi Toppings

Among the many seafood toppings associated with Otaru, sea urchin, or uni, is particularly famous. Two varieties are commonly enjoyed: Ezomurasaki uni and Ezo bafun uni. They are sometimes referred to as “white” and “red” uni because of their different colors and characteristics.

The lighter-colored Ezomurasaki uni has a delicate flavor and is generally more affordable. Ezo bafun uni, known as “red uni,” is considered a premium variety. Otaru’s red uni is especially highly regarded and is known throughout Japan for its rich flavor and exceptional quality.

A Wide Variety of Seasonal Seafood

Sea urchin is only one of the many seafood specialties available in Otaru. The waters around the town provide an impressive variety of ingredients, including sweet shrimp, abalone, and northern shrimp-like mantis shrimp known as shako.

Shako is particularly interesting because it has two fishing seasons, allowing visitors to enjoy it at different times of the year. Each season brings its own selection of fresh seafood, making Otaru a rewarding destination for travelers who want to discover the changing flavors of Hokkaido’s waters.

Experience the Taste of Otaru’s Port

Otaru Nigiri Sushi offers a direct taste of the city’s history as a thriving port. Freshly caught seafood from the surrounding waters is carefully prepared by skilled sushi chefs and served as beautifully crafted pieces of nigiri.

For visitors to Otaru, enjoying seasonal sushi is an ideal way to experience the bounty of Ishikari Bay while discovering why this atmospheric port town has earned its reputation as one of Hokkaido’s great sushi destinations.
