Line-Caught Pollock Roe

Fresh, Flavorful Pollock Roe Harvested Using Traditional Fishing Methods

Line-caught pollock roe is a prized Hokkaido delicacy made from roe of Alaska pollock, a fish traditionally caught one at a time using a method known as longlining. Because each fish is carefully hooked individually, its body is less likely to be damaged, helping preserve the freshness and quality of the roe.

The roe is carefully removed while fresh, and only eggs with desirable size and color are selected. They are then promptly salted and left to mature, creating the specialty known as tsuri tarako, or line-caught pollock roe.

One of the secrets to its rich flavor is its simple seasoning. Only natural salt is used, allowing the roe’s savory taste to develop during the maturation process without being overwhelmed by additional seasonings.

The finished roe is packed with tiny, firm, plump eggs that create a satisfying texture and release a rich, briny flavor reminiscent of the sea. It is delicious served alongside a bowl of steamed rice and also makes an excellent accompaniment to drinks. For visitors exploring Hokkaido’s seafood specialties, this traditional delicacy offers a taste of the region’s fishing heritage.
