Distinctive Characteristics of Senshu Mizunasu

Egg-shaped: Senshu Mizunasu has a characteristic rounded, egg-like shape.

Thin and tender skin: Its skin is thin and soft, making the eggplant easy to eat.

Juicy and naturally sweet: The flesh contains plenty of moisture and has a mild sweetness.

Low in bitterness: Its low astringency allows it to be enjoyed even without cooking.

Lightly Pickled Senshu Mizunasu

To make lightly pickled Senshu Mizunasu, wash the eggplant, remove the stem, cut it lengthwise in half, and place it in a rice-bran pickling bed or seasoned pickling liquid. The length of time it is left to pickle can be adjusted according to personal preference.

The result is a refreshing dish that preserves the characteristic juicy texture of the fresh eggplant.
